Zucchini Hummus - I found this recipe on Vixi, a wonderful blog written by wellness educator and health coach Ashley Pitman, and since I'm not a big fan of the original hummus but love zucchinis, it seemed like a great alternative. I used all ingredients as given in the recipe and though it was yummy, next time I'd probably use a little less salt and lemon juice.
Superfood Chocolate Crackles - These treats come courtesy of Jessica Nazarali from Live Healthy Simply, and they're the perfect little healthy indulgence when craving chocolate. Since I didn't have the goji berries that the recipe called for on hand, I dehydrated some blueberries and used them along with almond butter - instead of peanut butter - with great success. They give just a little touch of sweetness, but if you need more, adding a drop of honey on top of the crackle before eating it will do the trick.
Raw Rolled Oat Cereal - This recipe comes from author and nutritionist Kimberly Snyder, and has already become one of my favourite breakfasts. This particular time, I used half the amount of avocado that the recipe calls for and added a banana as well as a few of the leftover dehydrated blueberries from the Chocolate Crackles. Besides the taste, what I love about this oatmeal is that it keeps me full far longer than any other breakfast meal.
